Key Ingredients for Cheeseburger Soup
Hereβs what youβll need to create the ultimate cheeseburger soup:
- Ground Beef: The heart of the dish, providing that classic burger flavor.
- Potatoes: For a hearty texture, similar to fries or potato wedges.
- Cheese: Shredded cheddar is the star, but you can mix in other cheeses like Monterey Jack or Velveeta for extra creaminess.
- Vegetables: Diced onions, carrots, and celery add depth and balance.
- Bacon: Optional but highly recommended for a smoky, crispy topping.
- Broth: Chicken or beef broth serves as the flavorful base.
- Milk or Cream: To make it rich and creamy.
- Seasonings: Dried Italian seasoning, salt, and pepper enhance the flavor.
- Toppings: Diced pickles, extra cheese, or croutons for a fun cheeseburger-inspired garnish.
How to Make Cheeseburger Soup
Ingredients:
- 1 pound ground beef
- 4 slices bacon
- 1 small onion, diced
- 1 clove garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 3 cups potatoes, peeled and cubed
- 4 cups unsalted chicken broth
- 2 cups shredded cheddar cheese
- 2 cups milk or half & half
- 2 tablespoons all-purpose flour
- 2 tablespoons butter
- 2 tsp dried Italian seasoning
- Salt and pepper to taste
Instructions:

- Cook the Bacon: In a large pot or Dutch oven, cook the bacon until crispy. Remove and drain on paper towels. Set aside.
- Cook the Beef: Add the ground beef to the pot and brown over medium heat. Drain excess grease and set aside.
- SautΓ© the Vegetables: In the same pot, melt butter over medium heat. Add the onion, carrots, and celery, cooking until softened, about 5 minutes. Add flour to the pot and cook until the raw flavor is removed, about 2 minutes. Add garlic.
- Add Potatoes and Broth: Stir in the chicken broth. Bring to a boil, then reduce the heat to a simmer. Add the potatoes and cook until tender, about 10-15 minutes.
- Create the Creamy Base: Add milk or half & half to the pot and simmer until thickened, about 5 minutes.
- Add Cheese and Beef: Reduce the heat to low and stir in the shredded cheese until melted. Add the cooked ground beef and season with salt and pepper to taste.
- Garnish and Serve: Ladle the soup into bowls and top with crispy bacon, extra cheese, or your favorite garnishes. Serve with crusty bread, crackers or my favorite, in a homemade bread bowl.

Tips for Success
- Use Freshly Grated Cheese: Pre-shredded cheese often contains anti-caking agents that prevent it from melting smoothly. Grating your own cheese ensures a creamy soup.
- Donβt Skip the Bacon: It adds a smoky, savory element that takes the dish to the next level.
- Make It Your Own: Add diced tomatoes, pickles, or even a splash of ketchup or mustard for a true cheeseburger-inspired twist.
