Hearty Cheeseburger Soup

Ingredients

  • 1 pound ground beef
  • 4 slices bacon
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 2 celery stalks, diced
  • 2 medium carrots, sliced
  • 3 cups potatoes, peeled and cubed
  • 4 cups unsalted chicken broth
  • 2 cups shredded cheddar cheese
  • 2 cups milk or half & half
  • 2 tbsp all-purpose flour
  • 2 tbsp butter
  • 2 tsp dried Italian seasoning
  • salt and pepper to taste

Instructions

  • In a large pot or Dutch oven, cook the bacon until crispy. Remove and drain on paper towels. Set aside.
  • Add the ground beef to the pot and brown over medium heat. Drain excess grease and set aside.
  • In the same pot, melt butter over medium heat. Add the onion, carrots, and celery, cooking until softened, about 5 minutes. Add flour to the pot and cook until the raw flavor is removed, about 2 minutes. Add garlic.
  • Stir in the chicken broth. Bring to a boil, then reduce the heat to a simmer. Add the potatoes and cook until tender, about 10-15 minutes.
  • Add milk or half & half to the pot and simmer until thickened, about 5 minutes.
  • Reduce the heat to low and stir in the shredded cheese until melted. Add the cooked ground beef and season with salt and pepper to taste.
  • Ladle the soup into bowls and top with crispy bacon, extra cheese, or your favorite garnishes. Serve with crusty bread, crackers or my favorite, in a homemade bread bowl.
