A taste of nostalgia

More than just a confection, this peanut butter fudge carries a nostalgic weight, reminiscent of my childhood as I sat in my Mammam’s kitchen and waited impatiently for a piece. This peanut butter fudge recipe is a cherished family recipe. Once the aroma fills the air, I think it will trigger your memories of gatherings and celebrations, where a plate of this delectable treat was always the star. For me, the act of making this peanut butter fudge is as cherished as savoring its final form. My family waits all year long for me to serve up this confection, along with my delicious chocolate walnut fudge.

Ingredients needed to make peanut butter fudge

This fudge requires a few simple ingredients:

  • Peanut butter (I prefer Jif)
  • Marshmallow fluff
  • Sugar
  • Milk

Equipment needed:

To make the fudge, you will need a heavy bottom pot with a handle. You need to be able to pour the confection out into the pan quickly, and having a handle makes that task simple. You also need an 8×8-inch square pan. I like to purchase disposable foil pans like these at my local market. I also like to use a wooden spurtle like these or a silicone spatula, as it makes getting the fudge out of the pan simple.

How to make the BEST peanut butter fudge:

Butter your 8×8 pan and set aside. Measure the peanut butter and marshmallow fluff into bowls and set aside. Combine sugar and milk into the pot and bring to a boil over medium heat. Allow to boil for 3 minutes, stirring constantly. Remove from heat, mix in peanut butter and fluff until both are melted and thoroughly combined. Immediately pour into the pan and allow to cool. Chill until set and cut into pieces!

Timing is important

One thing I do know about confections, especially fudge, is that timing is everything. Boil too long and the mixture evaporates, producing a hard fudge end product. Likewise, if not boiled long enough, the fudge becomes too watery and will be soft. A mixture not stirred constantly may also produce a gritty fudge, yuk! Make sure to keep that mixture on the move to prevent sugar crystals from forming on the sides of the pan. Bring the mixture to a complete boil, time it for exactly 3 minutes, stir constantly and you will have a smooth, creamy and delicious fudge.

Variations

Now, I have never varied from this recipe because I love peanut butter fudge that much! However, if you are feeling adventurous, you could certainly add chocolate chips, chopped peanuts, or anything to your liking. Let me know what you come up with!

Ingredients

  • 2 cups sugar
  • 1/2 cup milk (2% to whole)
  • 1 1/3 cup peanut butter (I prefer Jif)
  • 1 cup marshmallow fluff

Instructions

  • Measure peanut butter and marshmallow fluff into cups. Set aside.
  • In a saucepan, bring sugar and milk to a boil over medium heat.
  • Boil for about 3 minutes, stirring constantly. Remove from heat.
  • Add peanut butter and marshmallow fluff. Mix well until all the marshmallow has been melted.
  • Quickly pour into a buttered 8×8-inch square pan. Allow to cool completely
  • Chill until set. Cut into squares.
