A healthy side dish

There’s nothing better than picking fresh green beans from your garden and cooking them up to serve your family a wholesome meal. Green beans are packed full of fiber, folate, and potassium which can help regulate blood pressure. Garlic is an immunity boosting powerhouse and can help keep viruses at bay (and vampires). Almonds are also full of fiber and are a powerful antioxidant.

Those who say they don’t like green beans have probably either had them frozen or canned. Every summer I make certain to plant many succession rows of green beans in order to enjoy them for as long as possible. I have tried to both freeze and can green beans and must say that they taste terrible. Only fresh green beans sit at my table! I must add that I also prefer the slender bean and always grow Baker Creek’s Contender green bean. This bush bean grows well in any soil and produces a large amount of slender, tender green beans.

Ingredients to make garlic almond green beans

  • 1 bunch of fresh cleaned green beans, ends trimmed (about 1 pound)
  • 2 cloves fresh garlic, minced
  • 1/4 cup slivered almonds
  • Freshly grated parmesan cheese
  • Salt and pepper

How to make garlic almond green beans

  • Heat a large skillet over medium heat and add 2 tbsp olive oil.
  • Add green beans and sauté until the beans turn dark green.

  • Add minced garlic and continue to cook until garlic is fragrant and beans have slightly crispy edges, about 5 minutes. Season with salt and pepper.

  • Add almonds and toss, cooking for 1 minute longer.

  • Remove from heat and top with freshly grated parmesan cheese.
