How to make chocolate walnut fudge

Butter your 8×8 pan and set aside. Measure the chocolate chips, marshmallow fluff, and chopped walnuts into bowls and set aside. Combine sugar, evaporated milk, butter, and salt into the pot and bring to a boil over medium heat. Allow to boil for 5 minutes, stirring constantly. Remove from heat, add in chocolate chips, marshmallow fluff, and walnuts until all are melted and thoroughly combined. Immediately pour into the pan and allow to cool. Chill until set and cut into pieces!

Timing is important

One thing I do know about confections, especially fudge, is that timing is everything. Boil too long and the mixture evaporates, producing a hard fudge end product. Likewise, if not boiled long enough, the fudge becomes too watery and will be soft. A mixture not stirred constantly may also produce a gritty fudge, yuk! Make sure to keep that mixture on the move to prevent sugar crystals from forming on the sides of the pan. Bring the mixture to a complete boil, time it for exactly 5 minutes, stir constantly and you will have a smooth, creamy and delicious fudge.

Ingredients

  • 2 tbsp butter
  • 1 1/2 cups sugar
  • 2/3 cup evaporated milk
  • 1/4 tsp salt
  • 1/2 cup marshmallow fluff
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup walnuts, chopped
  • 1 tsp vanilla

Instructions

  • Measure out marshmallow fluff, chocolate chips, and walnuts into bowls, set aside.
  • To the pot, combine butter, sugar, evaporated milk, and salt. Bring to a boil.
  • Boil mixture for 4-5 minutes, stirring constantly.
  • Remove from heat. Stir in marshmallow fluff, chocolate chips, walnuts, and vanilla until well combined and fully melted through.
  • Immediately pour mixture into a buttered 8×8-inch square pan. Allow to cool completely.
  • Refrigerate until set. Cut into pieces.
