There’s just something magical about fall—the crisp air, crunchy leaves underfoot, and the excuse to bring out all the warm, spiced flavors we love. And while pumpkin spice lattes may get all the glory, fall cocktails are where the real fun begins. Whether you’re hosting friends around a bonfire, planning a Thanksgiving toast, or just winding down after a long day, these 3 fall cocktails bring the cozy vibes of the season right to your glass.

Apple Cider Cooler

If autumn had a signature drink, it would be this one. Apple cider pairs perfectly with rum and pear for a warming cocktail that feels like fall in every sip.

How to make it:

  • 2 oz rum (dark or spiced)
  • 3 oz fresh apple cider
  • ½ oz lemon juice
  • 1 tablespoon pear nectar (See NOTE below)
  • Apple slices & cinnamon stick for garnish

Shake it all up with ice, strain into a glass, and top with a splash of selzer if you like a little fizz. Sweet, spiced, and oh-so cozy.

NOTE: To make pear nectar, blend a can of sliced pears in their own juice in a blender. Strain if you prefer a smoother texture.

2. Orange Rosemary Gin Fizz

This cocktail is one of those drinks that looks impressive but is incredibly easy to make. Plus, the rosemary garnish gives it an elegant, aromatic flair that will wow your guests.

How to make it:

  • 2 oz gin
  • 1 tbsp fresh lemon juice
  • 2 oz orange juice
  • Top with Sprite and rosemary sprig

Shake first three ingredients well and serve over ice. Top with Sprite. It’s tangy, sweet, and warms you right down to your toes.

3. Pumpkin Espresso Martini

Yes, pumpkin spice lovers, this one’s for you. Decadent and a little indulgent, this cocktail feels like dessert in a glass.

How to make it:

  • 2 oz vodka
  • 2 oz cold brew coffee
  • 1/2 oz coffee liquor
  • 2 tbsp pumpkin spice syrup (See NOTE below)

Shake it all up until frothy. pour into your favorite martini glass and garnish with a cinnamon stick.

NOTE: For pumpkin spice syrup combine 1 cup water with 2 cups brown sugar in a saucepan and heat over medium until sugar dissolved and well heated through. Remove from heat and add 1/2 cup pumpkin puree, 2 tsp pumpkin pie spice, and 1 tsp vanilla extract. (My homemade Spiced Rum Vanilla works excellent in this recipe!) Allow to cool completely. Equipment

Ingredients

Apple Cider Cooler

  • 2 oz rum (dark or spiced)
  • 3 oz fresh apple cider
  • 1/2 oz lemon juice
  • 1 tbsp pear nectar (See Note 1 below)
  • seltzer
  • fresh apple slices and cinnamon sticks for garnish

Orange Rosemary Gin Fizz

  • 2 oz gin
  • 1 tbsp lemon juice
  • 2 oz fresh orange juice
  • Sprite
  • rosemary sprigs for garnish

Pumpkin Espresso Martini

  • 2 oz vodka
  • 2 oz cold brew coffee
  • 1/2 oz coffee liquor
  • 2 tbsp pumpkin spice syrup (See Note 2 below)
  • cinnamon stick for garnish

Instructions

Apple Cider Cooler

  • Filler a shaker with ice
  • Add all ingredients except seltzer. Shake until well combined and cold
  • Pour into a cocktail glass. Top with seltzer. Garnish

Orange Rosemary Gin Fizz

  • Fill a shaker with ice
  • Combine gin, lemon and orange juice and shake well.
  • Pour over ice. Top with Sprite and rosemary sprig

Pumpkin Espresso Martini

  • Fill a shaker with ice
  • combine all ingredients and shake well
  • Pour into a martini glass. Add cinnamon stick for garnish

Notes

*Calories are approximate
Note 1: Pear Nectar
Combine 1 can of sliced pears in juice into a blender and process until smooth. Stain if a finer texture is desired. Store in the refrigerator.
Note 2: Pumpkin Spice Syrup
In a sauce pan, combine 1 cup water with 2 cups brown sugar. Heat over medium until sugar is dissolved and heated through. Remove from heat and add 1/2 cup pumpkin puree, 2 tsp pumpkin pie spice, and 1 tsp vanilla. Mix well. Store in the refrigerator.
