Strawberries and Cream Popsicles

Ingredients

  • 1 pound fresh strawberries, hulled
  • 1/4 cup honey (adjust depending on how sweet your berries are)
  • 1/2 tsp lemon juice (optional, for brightness)
  • 3/4 cup heavy cream
  • 1 tsp vanilla extract

Instructions

  • In a blender, whiz up the strawberries with the honey and lemon juice until smooth. Taste and adjust sweetness if needed.
  • Add the heavy cream and vanilla extract until well combined.
  • Pour the strawberry purée into each popsicle mold.
  • Insert sticks and freeze for at least 4–6 hours, or until solid.
  • Run the mold under warm water for a few seconds to release, then enjoy the chilly, creamy berry goodness!
