Ingredients

  • 3 cups pecan halves
  • 3 tbsp pure maple syrup
  • 1 tbsp melted butter or olive oil
  • 1 1/2 tsp chili powder
  • 1/2 tsp cayenne powder (adjust for taste)
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  • Set your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • In a large mixing bowl, combine maple syrup, olive oil or butter, chili powder, cayenne pepper, salt, and vanilla. Stir well to create a smooth glaze.
  • Add the pecan halves to the bowl and toss until evenly coated with the glaze.
  • Spread the pecans in a single layer on the prepared baking sheet. Bake for 12–15 minutes, stirring halfway through to ensure even caramelization.
  • Let the pecans cool completely before transferring them to an airtight container. They’ll crisp up as they cool.
