Ingredients

  • 4 center cut pork chops
  • 2 apples, cored and medium slice
  • 1 medium onion, thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup apple cider vinegar
  • 1/2 cup apple cider
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • 1 tbsp cornstarch
  • salt and pepper to taste

Instructions

  • Preheat your oven to 375°F
  • Season the pork chops with salt and pepper.
  • Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 3-4 minutes on each side, until browned. Transfer to a plate.
  • In a small bowl, whisk together the apple cider vinegar, apple cider, maple syrup, and Dijon mustard.
  • Add butter and cornstarch to the pan. Whisk until well combined.
  • Add the apple cider sauce to the pan and whisk until thickened.
  • Add the sliced apples, onions, and garlic.
  • Nestle the chops into the apple mixture. Cover the pan with foil and place in the oven. Bake for 20-25 minutes, until the pork chops are cooked through.
  • Remove the foil and bake an extra 5-7 minutes.
  • Remove the pork chops from the skillet and place on a serving platter.
  • Spoon the apple cider sauce over the pork chops and serve immediately.
