Pizza Soup

1 Heavy bottom soup pot
Ingredients

pound
Italian sausage (hot or mild)

pepperoni slices, quartered

16 oz jars
tomato sauce
32
oz
chicken broth
1
medium
onion, diced
1
large
green bell pepper, diced
3
cloves
garlic, minced
1
tsp
dried Italian seasoning
salt and pepper to taste

mozzarella cheese, shredded
Instructions
In a large soup pot, add 2 tbsp olive oil
Brown sausage, breaking up into small pieces
Add onions and bell pepper. Cook until softened
Add pepperoni and cook for 2 minutes
Add garlic, cook 1 minute longer
Add tomato sauce. Scrape up any brown bits on bottom of pot
Add chicken broth and Italian herbs. Season with salt and pepper to taste.
Simmer over medium heat for about 10-15 minutes or until thoroughly heated through.
Ladle into bowls and top with freshly grated mozzarella cheese

NOTE: This soup can be made using the following alternative methods:
Crock-Pot: Brown sausage then place all ingredients (except cheese) into a crockpot. Cook on low for 6 hours.
Instant Pot: Set to sauté function and brown the sausage. Add the rest of the ingredients (except cheese) and place the lid on and seal. Pressure cook on high for 5 minutes. Allow to cool for 5 minutes before carefully releasing pressure.
