Ingredients

lb
ham (cubed or a ham hock)
1
lb
fresh green beans, trimmed
1
lb
yellow or red baby potatoes, scrubbed and quartered
1
small
onion, diced
6
cups
chicken or vegetable broth (or enough to cover)
pepper to taste
Instructions
In a large pot or Dutch oven, sauté onion in olive oil until translucent.
Add the ham and broth. Bring to a simmer over medium heat for about 15 minutes.
Add the potatoes and cook for another 10-15 minutes, or until they start to soften.
If using a ham hock, remove from broth and allow to cool for easy handling. Remove the meat and return to the pot.
Stir in the green beans and continue to simmer until both the beans and potatoes are tender, about another 10-15 minutes.
Season with pepper to taste. Serve hot with crusty bread or a side of
PICKLED BEETS
for a true Pennsylvania Dutch experience.
