Ingredients

  • 4 boneless, skinless chicken breasts (pounded thin as needed)
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 5 oz sun-dried tomatoes, chopped
  • 1/2 cup dry white wine (or chicken broth)
  • 1 1/2 cup heavy cream
  • 3 cup fresh spinach
  • 2/3 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

Sear the Chicken:

  • Season the chicken breasts with salt, pepper.
  • Heat 2 tbsp olive oil in a large skillet over medium-high heat.
  • Sear the chicken for about 4-5 minutes per side until golden brown. Remove from the skillet and set aside.

Make the Creamy Sauce:

  • In the same skillet, add the butter, onion and cook until fragrant (about 2 minutes).
  • Add the garlic, Italian herbs, and cook another 30 seconds.
  • Pour in the white wine (or broth), scraping up any browned bits from the pan for extra flavor.
  • Stir in the heavy cream, Parmesan cheese, and sun-dried tomatoes. Simmer for 2-3 minutes.
  • Stir in the spinach until wilted.
  • Adjust seasoning with salt and pepper to taste.

Bring It All Together:

  • Return the seared chicken to the skillet, spooning the creamy sauce over the top.
  • Let the chicken simmer in the sauce for another 5-7 minutes until fully cooked (internal temperature should reach 165°F).
  • Garnish with fresh basil or parsley before serving.
