Homemade Chocolate Chip Peanut Butter Granola Bars

Ingredients

  • 2 1/2 cups rolled oats
  • 1 cup creamy peanut butter
  • 2/3 cup honey
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1/4 cup pumpkin seeds
  • 1/2 cup mini chocolate chips OR 1/4 cup each mini chocolate and peanut butter chips

Instructions

  • Line an 8x8-inch baking pan with parchment paper or foil, leaving a bit of overhang on the sides for easy lifting later.
  • In a medium saucepan over low heat, warm the peanut butter and honey until it’s smooth and well-combined.
  • Remove from heat and stir in the oats, vanilla, pumpkin seeds, salt, and any optional mix-ins you like. (See note below)
  • Allow the mixture to cool slightly before adding chocolate chips (you don’t want them to melt completely). Stir to evenly distribute.
  • Press the mixture firmly into the prepared pan, using a spatula or your hands to flatten the surface. Add extra chocolate chips on top if desired.
  • Refrigerate for at least 2 hours to set. Once firm, lift the bars from the pan using the overhanging parchment and cut into squares or bars.
  • Keep your homemade granola bars in an airtight container. They’ll last up to a week in the fridge or can be frozen for up to 2 months.
