Total Time:2 hours 35 minutes

Equipment

  • 2 Loaf pans
  • cheese grater
  • Bowls, measuring cups and spoons

Ingredients

  • 1 1/2 cups Warm water
  • 3/4 tsp active dry yeast
  • 1/4 cup sugar
  • 1/4 cup vegetable oil
  • 3/4 tsp salt
  • 4 1/2 cups flour
  • 1/2 cup finely chopped jalapeno peppers
  • 1 cup shredded cheddar cheese
  • 2 eggs, beaten

Instructions

  • In a large bowl, mix water, yeast, sugar, oil, salt and flour. Dough needs to be very stiff, so you may need to add more flour (up to 1/4 cup)
  • Cover the bowl and allow dough to rise in a warm place until double in size (about 1 hour)
  • In another bowl, mix eggs, jalapenos, and cheese
  • When dough has risen, pinch of golf-ball size pieces and roll into egg mixture. Place balls into two greased loaf pans.
  • Cover the loaf pans with a towel and allow to rise (approx. 30-45 minutes). Preheat oven to 350 degrees.
  • Bake loaves for 30-35 minutes until golden brown. Allow to cool in pan 5 minutes then turn out onto a wire rack to completely cool.

Notes

For best flavor and melting consistency, grate your own cheese instead of pre-shredded bagged varieties.
