Amish Creamy Coleslaw

Ingredients

  • 1 medium head of green cabbage, shredded
  • 1 small head red cabbage, shredded
  • 2 medium carrots, shredded
  • 1/4 cup apple cider vinegar
  • 3/4 cup sugar
  • 1 cup mayonnaise (I prefer Duke's)
  • salt and pepper to taste

Instructions

  • In a large bowl add apple cider vinegar, sugar, mayonnaise, and salt/pepper. Whisk to combine well and dissolve sugar. Taste and adjust salt/pepper seasoning.
  • Add shredded cabbages and carrots. Mix well to coat evenly.
  • Cover and refrigerate at least one hour before serving.

Notes

*Calories are approximate
Note: Dressing may taste "gritty" at first, but will melt with the breakdown of the cabbage. Mix well prior to serving.
May use two 16-oz bags of pre-shredded slaw mix
