Equipment

  • 1 Heavy bottom soup pot

Ingredients
  

  • 1 pound Italian sausage (hot or mild)
  • 5 oz pepperoni slices, quartered
  • 2 16 oz jars tomato sauce
  • 32 oz chicken broth
  • 1 medium onion, diced
  • 1 large green bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp dried Italian seasoning
  • salt and pepper to taste
  • 1 1/2-3 cups mozzarella cheese, shredded

Instructions
 

  • In a large soup pot, add 2 tbsp olive oil
  • Brown sausage, breaking up into small pieces
  • Add onions and bell pepper. Cook until softened
  • Add pepperoni and cook for 2 minutes
  • Add garlic, cook 1 minute longer
  • Add tomato sauce. Scrape up any brown bits on bottom of pot
  • Add chicken broth and Italian herbs. Season with salt and pepper to taste.
  • Simmer over medium heat for about 10-15 minutes or until thoroughly heated through.
  • Ladle into bowls and top with freshly grated mozzarella cheese

NOTE: This soup can be made using the following alternative methods:
Crock-Pot: Brown sausage then place all ingredients (except cheese) into a crockpot. Cook on low for 6 hours.
Instant Pot: Set to sauté function and brown the sausage. Add the rest of the ingredients (except cheese) and place the lid on and seal. Pressure cook on high for 5 minutes. Allow to cool for 5 minutes before carefully releasing pressure.
