Preheat your oven to 375°F
Season the pork chops with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 3-4 minutes on each side, until browned. Transfer to a plate.
In a small bowl, whisk together the apple cider vinegar, apple cider, maple syrup, and Dijon mustard.
Add butter and cornstarch to the pan. Whisk until well combined.
Add the apple cider sauce to the pan and whisk until thickened.
Add the sliced apples, onions, and garlic.
Nestle the chops into the apple mixture. Cover the pan with foil and place in the oven. Bake for 20-25 minutes, until the pork chops are cooked through.
Remove the foil and bake an extra 5-7 minutes.
Remove the pork chops from the skillet and place on a serving platter.
Spoon the apple cider sauce over the pork chops and serve immediately.
