Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup sourdough starter or discard
  • 1/2 cup pumpkin puree
  • 1/2 cup milk
  • 2 tbsp maple syrup
  • 1/2 tsp vanilla
  • 2 tbsp butter, melted

Instructions

  • Mix wet ingredients — starter, pumpkin, milk, melted butter, maple syrup, and vanilla.
  • Whisk dry ingredients — flour, baking powder/soda, salt, and spices.
  • Combine & rest — Let the batter sit for 10–15 mins (or ferment overnight for max flavor!).
  • Cook in a hot waffle iron until golden and crisp.
