Ingredients
For the Pork Tenderloin

pork tenderloin (1 - 1 1/2 pound)

tbsp
Dijon mustard
1
tsp
garlic powder
1
tsp
paprika
salt and pepper
For the Sauerkraut and Vegetables

pkg
sauerkraut, drained and rinsed
1
large
apple, cored and sliced (Fuji, Pink Lady, or Granny Smith work best)
1
medium
onion, sliced thin
1
cup
apple cider
1/4
cup
brown sugar
Instructions
Preheat oven
to 400°F (200°C).
Prepare the pork:
Pat the tenderloin dry. Mix Dijon mustard, garlic powder, paprika, salt, and pepper, then rub evenly over the pork.
Sear the pork (optional):
Heat a skillet with 1 tbsp olive oil over medium-high heat. Sear the pork 2–3 minutes per side until browned.
Arrange vegetables:
In a roasting pan, combine sauerkraut, apple slices, onion slices, apple cider, and brown sugar.
Roast everything:
Place pork on top of the sauerkraut mixture and roast 20–25 minutes, or until pork reaches an internal temperature of 145°F (63°C).
Rest the meat:
Let pork rest 5 minutes before slicing. Serve over the sauerkraut, apples, and onions.
