Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1/2 cup honey
  • 1/2 tsp vanilla extract
  • 1 cup canned pumpkin (not pumpkin pie)
  • 2 cups all purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup chopped walnuts

Instructions

  • Preheat oven to 325 degrees. Grease and flour the bottom of a standard loaf pan
  • In a medium bowl, whisk together flour, baking soda, salt, and spices.
  • In a large mixing bowl, cream butter, sugar, and honey with a mixer. Add pumpkin puree and vanilla. Mix until well combined.
  • Slowly stir dry ingredients into the wet mixture until just combined (don’t overmix!). Fold in walnuts.
  • Pour batter into prepared loaf pan.
  • Bake for 60 minutes, or until a toothpick inserted in the center comes out clean. May take a little longer depending on the size of loaf pan.
  • Let cool for 15 minutes in the pan, then transfer to a wire rack.
