Buffalo Chicken Dip

Ingredients

  • 3 cups rotisserie chicken, finely shredded
  • 1 pkg cream cheese, softened
  • 1 cup ranch dressing OR blue cheese dressing
  • 1 cup buffalo hot sauce (like Frank’s RedHot)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 1 shallot, fine diced
  • 1 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Optional: green onions or parsley for garnish

Instructions

  • Preheat your oven to 350°F.
  • In a large bowl, mix softened cream cheese, buffalo sauce, ranch (or blue cheese), onion, and seasonings until smooth.
  • Fold in shredded rotisserie chicken, 1 1/2 cups cheddar cheese, and all of the mozzarella cheese.
  • Spread the mixture into a baking dish and top with remaining 1/2 cup cheddar cheese.
  • Bake for 25-30 minutes, until bubbly and lightly golden on top.
  • For extra goodness, finish under the broiler for 3-5 minutes until browned around the edges and bubbly.
  • Garnish and serve hot with your favorite dippers.
