Ingredients

rotisserie chicken, finely shredded

cream cheese, softened
1

ranch dressing OR blue cheese dressing
1
cup
buffalo hot sauce (like Frank’s RedHot)
2
cups
shredded cheddar cheese (divided)
1
cup
shredded mozzarella cheese
1
shallot, fine diced
1
tsp
pepper
1
tsp
garlic powder
1
tsp
smoked paprika
Optional: green onions or parsley for garnish
Instructions
Preheat your oven
to 350°F.
In a large bowl, mix softened cream cheese, buffalo sauce, ranch (or blue cheese), onion, and seasonings until smooth.
Fold in shredded rotisserie chicken, 1 1/2 cups cheddar cheese, and all of the mozzarella cheese.
Spread the mixture into a baking dish and top with remaining 1/2 cup cheddar cheese.
Bake for 25-30 minutes, until bubbly and lightly golden on top.
For extra goodness, finish under the broiler for 3-5 minutes until browned around the edges and bubbly.
Garnish and serve hot with your favorite dippers.
