Ingredients

  • 2 cups fresh or frozen blueberries
  • 1/2 cup water, divided
  • 1 tbsp lemon juice
  • 1/4 cup honey (or more as needed for sweetness)
  • 1/2 tsp vanilla extract
  • 1 tbsp cornstarch (for thickening)

Instructions

  • In a medium saucepan, combine the blueberries, lemon juice, and 1/4 cup water. Stir to mix.
  • Place the saucepan over medium heat. Cook, stirring occasionally, until the blueberries release their juices and the mixture begins to simmer (about 5-7 minutes).
  • If you prefer a thicker compote, dissolve the cornstarch in a 1/4 cup of water to create a slurry. Stir it into the blueberry mixture and cook for another 2-3 minutes until the compote thickens.
  • Remove the saucepan from the heat. Stir in honey and vanilla extract for extra flavor (if using). Adjust sweetness to preferred taste.
  • Allow the compote to cool slightly before serving. Store leftovers in an airtight container in the refrigerator for up to a week.
