Ingredients
  

  • 1 lb baby potatoes, scrubbed and halved
  • 12 oz green beans, trimmed and halved
  • 5 tbsp olive oil, divided
  • 1 1/2 tsp garlic powder
  • 1 tsp vegetable seasoning or dried herbs of choice
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400 degrees.
  • Halve potatoes and place on a parchment lined baking sheet.
  • Drizzle with 3 tbsp olive oil and toss to coat well.
  • Sprinkle with garlic powder, salt and pepper. Toss to coat well.
  • Spread potatoes in a single layer and roast in oven for 20 minutes.
  • In a bowl, add green beans and 2 tbsp olive oil. Toss to coat well.
  • Sprinkle with salt, pepper, and vegetable seasoning and/or dried herbs of choice. Toss to coat well.
  • After 20 minutes, remove baking sheet and turn potatoes.
  • Add green beans in a single layer and return to oven.
  • Roast and additional 25 minutes or until potatoes are fork tender and vegetables are golden brown.
  • Serve immediately
