The beauty of this dish is that you can use any type of potato you have on hand. My personal favorite are my homegrown Kennebec or Pontiac potatoes directly from the garden. However, when I run out of them, I love to use a bag of the little tri-color potatoes from my local grocery store. These are my favorite because the size and colors are perfect for this dish. - 1 pound baby potatoes, scrubbed and halved
- 12 oz fresh green beans, trimmed and cut in half

- vegetable seasoning or dried herbs of choice

- Preheat oven to 400 degrees.
- Halve potatoes and place on a parchment lined, rimmed baking sheet.
- Drizzle with olive oil and toss to coat well.
- Sprinkle with salt, pepper, and garlic powder. Toss to coat well.
- Roast in oven for 20 minutes.
- In the meantime, wash, dry, and trim green beans. Place in a bowl.
- Drizzle with olive oil and toss to coat well.
- Sprinkle with salt, pepper, and 1 tsp. of vegetable seasoning or dried herbs of choice.
- Remove pan from oven. Flip potatoes and add green beans to form a single layer.
- Roast an additional 25 minutes until potatoes are fork tender and vegetables are golden brown.

- 1 lb baby potatoes, scrubbed and halved
- 12 oz green beans, trimmed and halved
- 5 tbsp olive oil, divided
- 1 1/2 tsp garlic powder
- 1 tsp vegetable seasoning or dried herbs of choice
- salt and pepper to taste
Instructions
- Preheat oven to 400 degrees.
- Halve potatoes and place on a parchment lined baking sheet.
- Drizzle with 3 tbsp olive oil and toss to coat well.
- Sprinkle with garlic powder, salt and pepper. Toss to coat well.
- Spread potatoes in a single layer and roast in oven for 20 minutes.
- In a bowl, add green beans and 2 tbsp olive oil. Toss to coat well.
- Sprinkle with salt, pepper, and vegetable seasoning and/or dried herbs of choice. Toss to coat well.
- After 20 minutes, remove baking sheet and turn potatoes.
- Add green beans in a single layer and return to oven.
- Roast and additional 25 minutes or until potatoes are fork tender and vegetables are golden brown.
- Serve immediately
