Ingredients list
- 2 cups whole milk (I use raw milk)
- 1 cup heavy cream
- 1/4 cup sugar plus 1/4 cup sugar
- 4 egg yolks
- 1/2 tsp vanilla
- 1/2 cup hazelnut spread (I use Nutella)
- 1/2 cup dark chocolate chips
- Chopped hazelnuts (optional)
The process
- Combine the milk, cream and 1/4 cup sugar over low heat until the sugar dissolves, about 5 minutes.
- Beat egg yolks and 1/4 cup sugar until light yellow and thick.
- Add a little warmed milk mixture to the egg mixture to temper the eggs.
- Add the egg mixture to the milk mixture and heat until thickened and coats the back of a spoon, about 10 minutes.
- Strain the mixture through a fine strainer to remove any lumps. Add hazelnut spread and dark chocolate chips and stir until melted and well combined.
- Allow to cool and place in the refrigerator overnight
- The next morning process in your ice cream maker and freeze as per your machine’s directions.
- Top with hazelnuts and serve immediately or pack ice cream into a freezer safe container and keep in freezer until ready to serve.
